Tomato Basil Bisque (upgrade pre-made soup)

Safeway’s pre-made Tomato Basil Bisque

1 block Parmigiana Reggiano Cheese

Fresh Whole Leaf Basil

1 small Baguette (french or sour dough)*

1 clove Garlic

Extra Virgin Olive Oil

Open and warm soup in a saucepan with a lid, over med/low heat, stirring occasionally.

Slice the Baguette and place in a toaster oven or on a cookie sheet to be broiled. Toast or broil (watching carefully so they don’t burn under broiler – do not walk away!!!) Turn over to do both sides if you are using a broiler.

Use a vegetable peeler to thinly slice med chunks of cheese and set aside. 

Wash and carefully dry basil then stack leaves, roll and thinly slice and set aside. 

When the bread is toasted, take one clove of garlic slice a small section off to expose the inside then rub each piece of toast with the garlic while it is still warm, set aside.

To serve. Ladle soup into bowls, sprinkle with cheese shavings, basil, and drissle with olive oil. Serve toast on the side so it can be dropped in right before you eat. 

*Trader Joes sells very small baguettes that slice into bite size croutons.
